Lentil ragout

Serves 6

Tip: You can use lentils of any color in this ragout. However, red lentils give the dish a beautiful color.

  1. Add 1 teaspoon olive oil.
  2. Add 1 cup onions.
  3. Saute for 3 minutes.
  4. Add 6 medium tomatoes.
  5. Saute for 3 minutes, stirring frequently.
  6. Add 5 cups water.
  7. Add 1 cup raw red lentils.
  8. Cook for 20 minutes until most of water is absorbed.
  9. Add 4 cloves garlic.
  10. Add 1 teaspoon kosher salt.
  11. Add 1/4 teaspoon ground black pepper.
  12. Stir in 1 tablespoon chopped fresh thyme.
