Tomato basil pesto sauce

Serves 15

Tip: To make this sauce in a hurry, use canned, diced tomatoes with no added salt instead of fresh Roma tomatoes. They will cook down faster.

  1. Add 1/4 cup olive oil.
  2. Add 4 minced garlic cloves.
  3. Add 1/4 cup red wine vinegar.
  4. Saute 2 minutes.
  5. Add 8 cups diced Roma tomatoes.
  6. Add 1/2 cup tomato paste.
  7. Add 12 chopped fresh basil leaves.
  8. Add 1 tablespoon sugar.
  9. Add 1/2 teaspoon salt.
  10. Add 1/4 teaspoon ground pepper.
  11. Simmer 8 to 10 minutes until tomatoes break down.
  12. Add 1/2 cup grated Parmesan cheese.
  13. Process until smooth.
