Whole-wheat pumpkin pancakes

Serves 10

Tip: If you want to prepare the batter ahead of time, keep the dry and wet ingredients separate until ready to cook.

  1. Add 1 cup fat-free plain Greek yogurt.
  2. Add 1 cup water.
  3. Add 3 eggs.
  4. Add 3/4 cup pumpkin puree.
  5. Add 2 tablespoons canola oil.
  6. Add 2 teaspoons vanilla extract.
  7. Stir until combined.
  8. Add 2 cups whole-wheat flour.
  9. Add 1/3 cup brown sugar.
  10. Add 2 tablespoons sucralose (Splenda).
  11. Add 2 tablespoons baking powder.
  12. Add 1/2 teaspoon cinnamon.
  13. Add 1/2 teaspoon salt.
  14. Slowly add wet ingredients to dry ones.
  15. Whisk until well-incorporated.
  16. Coat hot nonstick pan with cooking spray.
  17. Add 1/4 cup of batter.
  18. Cook 2 minutes until surface is bubbly.
