Lentil Bolognese Recipe

Ingredients:
2 cup Water
3/4 cup Lentis, Dry
1-1/2 tsp Olive Oil
2 ounce Yellow Onions
1/4 cup Diced Carrots
1-1/2 tsp Minced Garlid
1 tbsp Tomato Paste
2 cup Tomato Puree
1/8 tsp Salt
1/4 tsp Black pepper

Instructions:
Cook the lentils in boiling water until fork tender and fully cooked 15-20 minutes. Drain and set aside. In a large pan, heat olive oil and saute the onions and carrots until soft and onions are golden, about 10 minutes. Add the garlic and Italian seasoning and cook for a minute. Add the tomato paste and cook stirring until the paste is caramelized, about 5 minutes. Add the crushed tomatoes and the lentils. Season with salt and black pepper, cover and simmer for 30 minutes.
